Easy Weeknight Lettuce Wraps

Disclaimer: this is normally more ingredients than I like to use in a recipe. Especially those one off ingredients you normally look at and scoff knowing you'll never use it again (what the heck is hoisin sauce). HOWEVER those are the recipes that work best when you're cooking with friends and splitting the ingredients between everyone. Spending time with girlfriends & trying recipes you might not otherwise? 

Win. Win.

Ingredients:
- 1 tablespoon Olive Oil
- 1 lb ground chicken
- 2 cloves garlic, minced (I used the minced garlic from a jar)
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon Sriracha 
- 1 can water chestnuts, drained
- 2 green onions, thinly sliced
- salt & pepper to taste
- 1 head butter lettuce

1. Heat olive oil in saucepan over medium high heat. Add ground chicken and cook until browned, making sure to crumble the chicken as it cooks. Drain excess fat.

2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha until onions have become translucent. Stir in chestnuts and green onion until tender (1-2 minutes) and season with salt and pepper

3. Serve in the center of butter lettuce, taco style



I served with rice (would recommend white rice) & edamame
